Welcome!
Established in 2018, the Southern Syrup Research Center (SSRC) serves as a central hub of syrup knowledge for the southern part of the United States. It was created as a complement to northern institutions, to expand and research the problems and issues unique to syrup production in the south. When people hear “syrup,” the product is typically associated with northern places like Canada or Vermont. The SSRC is here to increase knowledge and promote tree syrup that is right here in the Appalachian region. Our mission is to promote research, education and demonstration programs that target the challenges associated with producers in the southern portion of the commercial sugar maple range. Sap and syrup production knowledge is relatively untapped in this region of the United States, and The Southern Syrup Research Center (SSRC) wants that to change.
